It’s late in the evening and we’re heading home from the pub/club hungry. Only one food can satisfy our cravings and that’s the döner kebab. It’s easily one of Britain’s favourite late-night, drunk meals. But at other times of day, the Turkish sandwich doesn’t get the respect it deserves.
Michelin-star chef Brad Carter aims to change all that when he launches One Star Döner Bar in Birmingham in early 2023. Along with partner Adam Regan, he is determined to get as many ‘babs’ as possible into the hands of Brummies. Creating something that locals will want to eat at any time of day.
What started as a side project during lockdown at Brad’s former restaurant Carters of Moseley, has taken on a life of its own. One Star Döner Bar will launch inside the Hare & Hounds pub in Kings Heath, taking inspiration from Berlin’s Gemüse Kebab. Which Brad testifies is one of the best dishes he has ever eaten.
One Star Döner Bar is also inspired by the rave scene, a subculture close to Brad’s heart. The kebabs act as ‘perfect post-rave sustenance’, with Brad’s signature potato smileys available as a side order. DJ, promoter, and now the owner of the Hare & Hounds pub, Adam Regan’s involvement only strengthens this influence as the pair aim to make Brad’s high-end cooking more accessible to a wider audience.
“Our kebabs are as good at 2 pm as they are at 2 am, and I can’t think of anywhere better suited than the iconic Hare & Hounds to serve them,” said Brad. “Adam and I have hoped to collaborate for a long time. It feels great to work together to see this become a reality.”
The curated menu will feature two kebabs and two shawarmas. Brad makes everything with the same high-quality ingredients he uses on the menu at Carters of Moseley. This includes lamb from Launceston in Cornwall, Tamworth mortadella and Cotswold white chicken. Find One Star Döner Bar at the Hare & Hounds.
